Your cart is empty.This hangiri is a traditional tub used to mix sushi rice and is made from Japanese cypress wood from Nagano prefecture. The tub is handmade by artisans from carved and shaped slats of cypress wood bound by copper bands. A hangiri is an important tool to have when making sushi rice. The large, flat surface allows for even seasoning and cooling and the wood absorbs excess unwanted moisture. It is recommended pre-soaking the tub with water before each use. This will cause the wood to expand and create a secure fit for the copper ring.

Works as intended. I havent seen any decoloration so far. It had to be primed with water and vinegar before the first use. I give it 4.5 stars bc it would be nice if it had a lid and a storage bag or something to protect it.

This is an excellent high quality rice mixing bowl, made in Japan. Beautifully constructed with high quality materials and craftsmanship. It'll make you feel like a master sushi chef!

Glad I invested in this tub rather than a more inexpensive one. Very satisfied with it’s high quality. I expect many years of useful service.

So far, very happy with the bowl. It makes the cooling process nice and easy and it certainly adds to the mystique. However, I cannot honestly say that the rice makes "better" sushi than it was when cooled in a large stainless steel bowl. Incidentally, the idea that you should use plastic instead of stainless steel bowl makes no scientific sense at all. Neither substance absorbs water. Metal should, in theory, dissipate heat quicker than wood or plastic since it is a conductor and the others are insulators.It is fairly large, but I am glad that I did not get anything smaller. I've attached a few images showing what it looks like with different amounts of rice. The first three show 1.5 (dry) cups of Botan Calrose rice cooked with 2 cups water (straight from my trusty Panasonic SH15PA cooker, spread out, pushed to side), which is the smallest amount I make, and the last one shows 5 (dry) cups cooked in a friends Cuisinart "smart" rice cooker. In the final one the rice depth is about 1 inch. This is about the most I make. One rice cup is 3/4 of a standard cup cooked according to instructions. I would not want much more than 5 (dry) cups of rice in this bowl. I've noticed the first picture with unspread rice might not show up.

I have been making sushi at home since the mid 90's and never knew about a hangiri until recently. Yes, it does make the rice better, but what struck me the most was how much easier it was to mix the vinegar in with the rice! I did a lot of research before purchasing and I thought this looked like the best option as I did not want a cheap piece of junk made of pine and plastic but also didn't want to lay down megabucks for a high end product. I took away one star for 2 reasons: there were no instructions, and seasoning the hangiri is very important, but I guess they figure if you are in the market for one you already know what to do; also, I noticed a pool of water when I would soak it before use(as well as the initial soaking before first use) because it was leaking at the bottom. However, the last couple of batches I made I noticed no puddle, so I think the wood just needed a few soaks in order for the wood to swell enough. Anyway, I have two teenage boys that can put away some sushi(and anything else you put in front of them) so they will be happy that I will be churning it out a lot more often now!

This is CLEARLY a quality hangiri, much better made than the previous one I had which came from an Asian grocery store in California. It has solid copper bands instead of twisted copper wire, and it's made from Japanese cedar instead of pine. I imagine it will last a long time. My only concern is that I might have bought one too large ........who am I kidding? We like sushi. A lot. Of course it's not too large.
