Simple effective machine that's very easy to clean. The rollers are large, over 2 inches. The roller scrapers are held on with springs that can be removed by hand for cleaning. Though it's good to wear gloves in case the spring pops out and hits your finger. Still, it's much easier to clean than Italian machines which have to be disassembled, and I clean the scrapers after every use. The cutter is also easy to clean. The dough hopper on top is very convenient, as is the placement of the cutter blades directly below the dough rollers. Both features make it easy to use while cranking the machine with one hand. The included stainless steel and wood platform doesn't have to be clamped down, though you may want to tape the two bottom ends to prevent any rough edges from scratching your work surface.I lubricated the accessible gears with a little food grade mineral oil, as cooking oil will go rancid and gel over time.I was worried that the hand crank would be difficult to use and that the electric version would be better, but the machine is very easy to operate by hand, and reliable, so I'm glad I didn't get the heavier electric version. One area that's a little awkward is the separate thickness adjustment knobs on either side. To calibrate them, I closed both sides so the rollers were exactly parallel, then painted vertical marks on the adjustment knobs, so now I can reproduce thickness easily without actually measuring.Overall a superior design, IMO to Italian style pasta machines. Easier to use, better with low hydration doughs, easier to clean. The main downside is the size and weight.

Let me start my review of the TFCFL Manual Pasta Maker by talking about me as a pasta maker and the first, completely unrelated, pasta machine I bought. I am new to pasta making, I wanted something to do with the kids where we could make our own food with our own hands. A pasta machine sounded like a great idea... so I started out by buying a completely different machine for around $50, it had a press and several cutting heads. I thought it was a good entry price to see if I even wanted to do it more than once... but it literally broke the second time I used it... for $50. Even after just the second time, though, I was hooked on pasta making and I knew I wanted to continue doing it. So I knew I had to get something that would last. Let me tell you, I have not been disappointed by the TFCFL Manual Pasta Maker, the thing is built like a tank, I'm not sure you could break it if you were trying to. It even comes with a spaghetti cutter to get you started. Easy five stars.
