This knife was a great project and seemed a good value for the quality of steel. I used it for about 6 months with no issue, but last night the blade chipped significantly from cutting through a delicata squash. Any of my other knives would have been fine, but I guess you get what you pay for. Super sharp (1mm slices of tomato, no problem), beginner project, but don’t expect to be able to use it for the same tasks you would use a name brand chefs knife.

Great project blade. I have made lots but every once in a while I get one that is not straight, called factory and gave them a heads up about quality control. Will purchase again. Ron

This assembles into a beautiful knife, however the included press-together rivets are cheap and difficult to use. After one didn't align properly, bent sideways and cracked a wood piece (after coating the tang with slow-setting epoxy), I replaced them with brass screw-together Corby rivets. The result is in the picture.The handle in this particular knife is cherry, finished with multiple coats of Waterlox Sealer/Finish. I reshaped the base of the handle to round-off the point. I wouldn't do it by hand, but it's easy with a disc or belt sander.The blank comes moderately sharp. Factory sharpening left striations on the edge...I'm guessing that it stopped at roughly 600 grit. Using a series of finer stones, finishing with a 6000 grit waterstone, it just took a few minutes to take it up to a mirror finish.Edge holding ability is about what you'd expect from VG-10 steel. I like extremely sharp tools, so I had to touch it up after about a month of use. YMMV :-)

Very nice Chef Knife, I made one for a friends wedding present. I wish they made a 10 model though.
